Homemade granola bars

Granola BarIt hit the 55 degrees mark today. That means we pull out the shorts and T-shirt and go BBQ in Minnesota, don’t ‘cha know. Now that spring might poke its buds out, I’m thinking of warm weather food.
This is one of my favorite snacks. It doesn’t require baking and is stored in the fridge. That makes it perfect for those stuffy hot days. Enjoy!

Hearty baked apples

P1070494It was 4 degrees when I woke up this morning. Needless to say, I’ve been trying to heat up the house with some baked goods. We have an abundance of apples for some reason. No worries because we all seem to love them. I thought it would be fun to try some baked to see if the kids like them.

I haven’t made them more than a few times and can’t remember the last time I ate one. What a surprise when my tummy felt warm and satisfied. Have you ever gotten that hearty, healthy, satisfied feeling from food? Mmm. These were good.

Cooped up

Today I was utterly amazed at our weather. Being from Minnesota, we have learned to accept snow storms and heat waves at the most unexpected times. I don’t think I have seen anything so similar to a Laura Ingalls Wilder snowstorm in my lifetime.
Realization set in as I tried to get out the door to feed the chickens. You see, I couldn’t.

Ok, ok, bad title. Maybe I should have called this one maple syrup snow cones. Either way, it sure was tasty eating our maple syrup snow last night.

Maple Syrup Time

Sap is here. It has been a long winter, but it is warm enough and our tree sap started running today. The days must be warm with the nights getting below freezing still. Mat went out again today to check our maple trees and to tap a few more. He took along some materials to cut firewood for our boiler.

When I hear something over and over sometimes I just accept it without understanding. Mat cut nearly a cord of wood. Today I was finally given understanding of what a cord is. It is 4 ft by 4 ft by 8 ft of cut wood. A maple syrup evaporator can make 25 gallons of maple syrup out of one cord of wood. We’ll see how much we get with our homemade evaporator.

We’re excited for the sap to flow. Please pray we have the endurance to keep up when we have more sap than we can handle.
