Homemade granola bars

Granola BarIt hit the 55 degrees mark today. That means we pull out the shorts and T-shirt and go BBQ in Minnesota, don’t ‘cha know. Now that spring might poke its buds out, I’m thinking of warm weather food.
This is one of my favorite snacks. It doesn’t require baking and is stored in the fridge. That makes it perfect for those stuffy hot days. Enjoy!

 

Homemade Granola Bars

  • Servings: 12+

1 cup peanut butter
1/3 cup maple syrup
2 + Tablespoons honey (according to how sweet you like)
1/2 cup butter or coconut oil
2 cups oats
2 cups combined total of: chocolate chips, date pieces, raisins, sesame seeds, coconut flakes, sunflower seeds, chia seeds, rice cereal or dried fruit

Melt butter or oil over low heat. Remove from stove and add peanut butter, maple syrup, and honey. Stir until combined. Add oats. Mix. Add remaining two cups of ingredients. Mix well.
Scrape into an 8×8 pan. Refrigerate about two hours or freezer for one hour, covered. Enjoy!
*These need to stay refrigerated or will become goo, which is ok if you like goo.
