Hearty baked apples

P1070494It was 4 degrees when I woke up this morning. Needless to say, I’ve been trying to heat up the house with some baked goods. We have an abundance of apples for some reason. No worries because we all seem to love them. I thought it would be fun to try some baked to see if the kids like them.

I haven’t made them more than a few times and can’t remember the last time I ate one. What a surprise when my tummy felt warm and satisfied. Have you ever gotten that hearty, healthy, satisfied feeling from food? Mmm. These were good.

Hearty Baked Apples

  • Servings: 4

4 Apples (I like firmer varieties)
Pecans, about 2 Tablespoons, chopped
Raisins or other dried fruit, about 2 Tablespoons
Cinnamon or apple pie spice, about 1/2 teaspoon
Maple syrup, 1-3 teaspoons depending on your preference
Maple syrup for drizzling on top.

Preheat the oven to 350º F. Wash and dry apples. Remove most of the core, making sure the bottom remains intact to hold ingredients.
Mix nuts, dried fruit and sweetener together.
Put apples into a small baking dish and put filling into the cored area. Drizzle with maple syrup.
Cover with foil and bake for 25-35 minutes. I liked mine cooked, but not mushy, so I recommend keeping your eye on it.
Allow it to cool for five minutes before enjoying.

Next time I will try halving, coring and cooking them open faced.
